1 zucchini sliced

1 cup broccoli

1 cup cauliflower

1 small onion diced

2 cloves of garlic

Cover veggies with water. Add sea salt and pepper to taste. Cayenne pepper will give it and extra zing.

Once cooked, add 2 cups raw spinach to blender/food processor and add cooked veggies and blend. Return mixture to pan and add 1.5 cups coconut milk. If desired garnish with tomatoes and pine nuts. The pine nuts add a nice rich unexpected flavor and crunch!

Remember do not overcook the veggies, as they retain more of their vitamins if lightly cooked or steemed.

    • It tastes absolutely fantastic. You can use either regular or light coconut milk. Enjoy!
